Ahi, Bluefin, and Rainbows Meet Smoke

I did have one last loin of Bluefin as well as Ahi, so I made a bourbon brine for them.  I also made a special bourbon brine for the Rainbow Trout I had and planned on a long smoke in the old stick burner.

I actually used hickory and cherrywood to marry it to the fish.





Add smoke.





all of that so I could get this!






All the extra was vacuum sealed for later enjoyment.




This time I mixed brown sugar with bourbon and drizzled it over the trout before smoking.  Wow!  So good!
