Tajin on the mahi, and a little cinnamon on the peaches and mangoes.



Trying to find ways to hit fish with a little more umami as well. The other night we cooked ribeye and then I threw the fish in the residual steak fat and it turned out just like I wanted. Gotta save the steak fat....

Another thing to try is to cook up bacon nice and crispy, pulled the bacon out and cook the fish in the bacon fat.  then crumble the crispy bacon over it in an aioli sauce or even just squeezed lemon or lime.

 Looks tasty for sure but Your Doctor might have a problem with Tom's Bacon idea ;D
