I love those big mouth buffalo!

And they get no love from folks here!  People really don't know what they're missing.  Huge fish that fight well, clean white flaky meat, just a few bones that require special attention.  Nice thing about the larger fish is the bones are easier to deal with.

Made fish tacos with some of the smoked buffalo over the weekend.  It was good stuff.
