I use this Victorinox 40517 as my fillet knife to take the meat off the spine. The 5 inch was my bait knife.

They are on sale for cheap at $19.95 and another 20% off today.

Vics resist rust well and have a sterling reputation in the meat cutting world. They steel and resharpen easily.

That's a great deal!  I was hoping they had a good clam knife in there, but only oyster knives.
