Stuffed Avocados

Well, I've tried this a bunch of ways, but it keep getting better.  I has some Bluefin tuna in the freezer along with a lobster tail.  I picked up some HUGE avocados from the market and started to whip something together.



I chopped some walnuts, almonds and added some panko. sesame seeds and Italian seasoning to a cup.

I also added garlic, chopped green onion, salsa fresca and a splash of sesame oil to another cup.



I chopped the Bluefin and lobster into small cubes about a 1/3 of an inch long and quickly seared it in the pan with the nuts.



I made some more room in the avocado for the stuffing...


Man, you can't go wrong with stuffed avocado.  The great thing is you can mix and match whatever your taste buds are in the mood for and it always comes out as a top dish!



A righteous meal you should add to your rotation the next time you prepare some seafood.

If you have a report card, we'll go out this season.  Just be patient as I am always so busy but we will definitely get out.   8)
